Old Fashioned

The Old Fashioned was one of the cocktails created before elaborate ingredients and advanced techniques became the norm. The Pendennis Club, a men’s club founded in 1881 in Louisville, Kentucky, claims the drink was invented there by a bartender in honor of Colonel James E. Pepper, a prominent bourbon distiller, who brought it to the Waldorf-Astoria Hotel bar in New York City. It is still a topselling classic cocktail internationally. This variation substitutes the original bourbon for aged Caribbean rum.

Ingredients

  • 60 ml Bodegas Papiamento Rum [2 ounces]

  • 4 dashes Angostura bitters

  • 4 dashes orange bitters

  • 5 ml Simple Syrup [1 teaspoon] of Coecoei liqueur

Garnish

  • 2 drops Maraschino cherry, strip of orange peel, for garnish

Preparation
SERVING FOR 1

Combine all ingredients in a cocktail shaker with cubed ice. Stir to chill with a long metal bartender’s spoon. Strain into a Double Old Fashioned glass. Garnish with the cherry and orange peel.
