Ginger Sling

A sling cocktail gets its name from “schlingen,” a German word meaning “to swallow,” and consists of a spirit mixed with sugar and water or soda. One version of the world-famous Singapore Sling, created in the early twentieth century at Raffles hotel in Singapore, contains gin, Grand Marnier, cherry liqueur, Benedictine, pineapple, lime, bitters, and club soda. Here, vodka substitutes for gin and ginger beer for club soda, while Runny Honey stands in for the sweet liqueurs. Fresh-pressed ginger juice gives this Caribbean sling its sharp, peppery edge.

Ingredients

  • 50 ml Papiamento Aruba Vodka [1½ ounces plus 1 teaspoon]

  • 50 ml unsweetened pineapple juice [1½ ounces plus 1 teaspoon]

  • 30 ml Runny Honey

  • 20 ml lime juice [½ ounce plus 1 teaspoon]

  • 10 ml fresh pressed ginger juice [2 teaspoons]

  • 5 ml Ginger Beer to float on top

Garnish

  • Thin slice of ginger on a skewer, pineapple leaves, for garnish.

Preparation
SERVING FOR 1

Combine all the ingredients in a cocktail shaker with ice and shake vigorously to combine. Strain and serve in a Double Old Fashioned glass over fresh ice. Float a few ounces, or taste, of Ginger Beer. Garnish with a ginger slice and a pineapple leaf.
